Ingredients of Vickys Toffee Apple Jam, GF DF EF SF NF
- You need 1000 g of cooking apples, peeled, cored & chopped weight.
- It’s of Juice of 1 lemon.
- Prepare 500 g of sugar.
- You need 4 tbsp of water.
- You need 2 tbsp of Brandy.

- Toss the apples in the lemon juice.
- Add half the sugar to a heavy based pan with the 4 tbsp water and melt over a low heat until dissolved and turning golden.
- Add in the chopped apples – the sugar will clump due to the change in temperature but it'll melt down again so don't panic!.
- Add the rest of the sugar, again stirring until dissolved.
- Turn the heat up and let boil for 15 minutes until the apples are super soft.
- Take off the heat and use a potato masher to break the mixture down until it's smoother.
- Return to the heat and boil 1 more minute then take back off the heat and stir in the Brandy.
- Spoon into sterilised jars and seal.
- Let sit overnight before enjoying.
